A super enjoyable and refreshing vegetarian meal: Paneer Biryani with sweet-scented Nafees Rice and cumulous soft cubes of flavorful paneer marinated in spices which add zyka /taste.
We just serve this delicious….no~no zykaful Paneer Biryani with Raita, Papad, Vegetable Salad & Curry too.
Everyone likes either Chicken Biryani , Mutton Biryani or Egg Biryani, but everyone loves Paneer Biryani. So we must try it.
Ingredients needed to make Paneer Biryani
I) Nafees Rice / Basmati Rice.
II)Cubes of Paneer
III) Boiled potato (as per your choice)
IV) Flavourful spices
(Bay Leaf, Cinnamon, Green and black cardamoms, Javitri, Sah jeera, Star anise, Fennel, Nutmeg)
V) Onion, Tomato, Ginger and Garlic paste
VI) Salt (upto your choice)
VII) Garam masala, Cumin powders, Kashmiri red chilli powder, Turmeric powder, Black Peeper Powder.
VIII) Biryani Masala (of your choice but I prefer-Bombay biryani Masala Suhana Biryani Masala).
IX) Coriander leaves, mint leaves and fried dry fruits to garnish.
How to make Paneer Biryani
Steps – to Make Paneer Biryani
ⅰ) Soak rice in water for at least 30-40 min
ii) Take one bowl and keep paneer cubes inside bowl and mix it well. And cover it atleast for 15-20 min for marination process.
iii) Take a pan and heat 1 tablespoon of ghee just to fry dryfruits- Cashews, Raisins. Fry it for 2mins. on low flame
iv) Again heat 5 table spoons of ghee and add the sliced onion and fry it until it turns in brown colour. After frying onions begin to caramelize.
Be attentive in this step it burn quickly and after that remove onion from pan in bowl.
NOW ITS TIME TO PREPARE PANEER WITH GRAVY
vi) Take a pan and heat 1-2 tablespoon of oil and then put chopped onion, when it turns brown colour we add Tomato, ginger and garlic purry , Green chilly and spices. Now we have to roast the spices.
[Spices- Kasoori methi, Haldi Powder, Cumin powder, black peeper powder, kashmiri mirch powder, Garam masala, Biryani masala, Salt] when spices till begins to leave oil we add fried paneer and boiled potatoes then after we add 3 tea cup Luke warm water for gravy and cook it for atleast 6-7min on low flame. Then add coriander leaf and turn off the flame.
v)Now again we heat almost 5-6 tablespoon of Ghee and then after we fry the cubes of paneer and boiled potatoes.
NOW ITS TIME TO COOK RICE-
vii) Take a pot and add water, when water boils we add whole spices. Like- Bay leaf, cinnamon, green and black cardamoms, javitri, Sah jeera, Star anise, fennel, jaifal and a pinch of salt. Then put soaked rice in it.When rice will be cooked we just turn off the flame and parse the rice.
viii) Then take a big pot, Greese it with Ghee and make layer of rice and paneer.
Like if you put 5 ladle of rice in pot then spread 2 ladle of paneer with gravy and potatoes. Again & again repeat the same process according to quantity you cook.
FOR GARNISH-
We add roasted dry fruits, Coriander leaf, mint leaf, paneer cubes , kewra water (Optional)
‘PANEER BIRYANI’ is ready to serve.
